Egg and cheese pide

Can’t get enough of pide – try our basic pide with four toppings for a pumpkin and fetta, spinach and fetta, lamb and tomato or egg and cheese versions.

1.Preheat oven to 240°C (220°C fan-forced).
2.Divide 1 quantity basic pide dough into three pieces, roll each piece to 12cm x 30cm. Brush edges of dough with a little water, fold 2cm border around edges of dough, press down firmly. Fold in corners to make oval shape. Heat oven trays in oven for 3 minutes. Quickly place pide on hot trays, bake pide 5 minutes. Remove from oven, press centre of pide down to flatten.
3.Whisk eggs with grated haloumi cheese and finely chopped green onion in large jug. Pour into the cavities of the pide. Bake further 10 minutes or until set. Cut each pide into eight slices serve with lemon wedges.
