Method

1.Combine milk, caster sugar and yeast in a medium jug. Cover and stand in warm place about 10 minutes or until frothy.
2.Sift flour, cocoa, extra caster sugar and salt into a large bowl. Stir in yeast mixture, extract, butter, 2 eggs, yolks, fruit and choc bits. Knead dough on floured surface about 10 minutes or until elastic. Place dough in greased large bowl. Cover and stand in warm place about 1 hour or until doubled in size.
3.Preheat oven to 200°C. Line a 6-hole texas muffin pan with paper cases.
4.Knead dough on floured surface about 10 minutes or until dough loses its stickiness. Divide dough into six equal portions and press into pan holes. Cover loosely and stand in warm place about 30 minutes or until doubled in size. Brush panettone with extra egg.
5.Bake panettone about 25 minutes. Stand in pan 5 minutes. Turn, top-side up, onto wire rack to cool. Dust with sifted icing sugar.
