Cream cheese frosting


1.Before you turn oven on, move a shelf to the middle of the oven.
2.Preheat oven to 180°C (160°C fan-forced). Grease a deep 20cm round cake pan; line the base with baking paper and extend 5cm up long sides.
3.Place bananas into large bowl of electric mixer and mash with a fork for about 30 seconds, or until almost smooth.
4.Add butter, essence, sugar, eggs and milk to bowl. Sift flour and soda into bowl. Beat cake mixture on medium speed for about 4 minutes, or until pale in colour.
5.Pour cake mixture into pan. Bake for about 1 hour. Stand cake in pan 5 minutes before turning, top-side up, onto wire rack to cool.
6.Meanwhile, to make cream cheese frosting: Sift icing sugar into small bowl of an electric mixer. Add cheese, butter and rind. Beat mixture on medium speed for 1-2 minutes, or until frosting is smooth.
7.Spread frosting over top of cake; sprinkle with cinnamon and top with slices of fresh banana, before serving.

You need overripe, almost black, bananas for this recipe because they give the best flavour. If your bananas are not ripe enough, put them in a paper bag in a cool place (not the refrigerator) for a day or two.
