Banana orange and date health loaf

Low in sugar and rich in fruit, this wholemeal loaf makes an excellent breakfast or afternoon energy booster.

Method

1.Grease a 14cm x 21cm loaf pan, line base and sides of pan with paper; grease paper.
2.Cream butter, rind and sugar in small bowl with electric mixer until light and fluffy, beat in eggs one at a time, add banana, beat until combined.
3.Transfer mixture to large bowl, stir in dates, then half the flour and half the orange juice, then stir in remaining flour and orange juice; stir until smooth.
4.Spread mixture into prepared pan. Bake in moderate oven for about 1 hour. Stand 5 minutes before turning on to wire rack to cool. Loaf will keep for 3 days.
