Banana loaf

This dense banana loaf is even more delicious when sliced and served with a drizzle of honey and sliced fresh bananas.

1.Preheat oven to 200°C (180°C fan-forced). Grease 8cm x 26cm bar cake pan; line base with baking paper.
2.Process flours, cinnamon and butter until crumbly. Add sugar, egg, milk and mashed banana; pulse until ingredients are just combined. Pour mixture into pan.
3.Bake about 40 minutes. Stand loaf 5 minutes; turn, top-side up, onto wire rack to cool. Serve sliced, topped with honey and sliced banana.

Did you know? Bananas are rich in fibre, including a special type of fibre known as resistant starch that is important for bowel health. Green or firm bananas are higher in resistant starch than ripe bananas.
