Banana, craisin and macadamia muffins

A clear lunch-box winner, packed with fruit and fibre, these banana, craisin and macadamia muffins are utterly delicious.

1.Preheat oven to 180°C (160°C fan-forced). Grease 12-hole (1/3-cup/80ml) muffin pan.
2.Combine flour, sugar, craisins and nuts in a large bowl; stir in combined banana, eggs, milk and oil. Do not over-mix; mixture should be lumpy.
3.Spoon mixture into prepared pan holes, fill each hole three-quarters full; bake about 15-20 minutes. Stand muffins 5 minutes before turning out onto a wire rack to cool.
