Almond shortbread drops

These easy, buttery cookies are delicious served with hot espresso. If you can't get blanched almonds, just use normal, unsalted almonds in their place.

Ingredients

Method

1.Preheat oven to 160ºC (140ºC fan-forced).
2.Process butter, flours and icing sugar until mixture forms a ball. Knead gently on floured surface until smooth.
3.Roll 2 teaspoons of mixture into balls; place on greased oven tray about 3cm apart. Top each ball with an almond.
4.Bake in moderately slow oven about 20 minutes or until browned lightly. Cool on tray.

This recipe can be made a week ahead.
