In this Christmas potato salad recipe fluffy boiled potatoes are topped with beautifully crisp ham and sprinkled with green onion and parsley. The pièce de résistance? A wonderfully piquant lemon and Dijon mustard dressing.
Make this potato salad as part of your Christmas feast, or whip it after the big day. It’s a fantastic way to use up leftover Christmas ham.
Ingredients
Method
In a medium saucepan, cover the potatoes with cold water and season with salt. Bring to the boil and cook over medium heat for 12 minutes or until just tender.
Meanwhile, heat the olive oil in a large non-stick frying pan, add the ham and cook until crisp.
LEMON DRESSING: Combine all ingredients in a screw top jar; season with salt and freshly ground pepper. Shake until well combined.
Drain potatoes and place in a medium bowl with the green onions and parsley; add half the dressing and carefully fold through trying not to break up the potatoes. Transfer to a serving dish and top with the ham, remaining Lemon Dressing and cornichons.

We used Dutch cream potatoes for their waxy yellow flesh and rich buttery taste. If you can’t find them, Desiree potatoes also work well.
