Flourless cakes are a true crowd-pleaser. They’re low-fuss and easy to throw together, and are generally gluten-free. Every baker needs a few flourless cakes in their repertoire. These triple-tested recipes put pantry alternatives such as almond or hazelnut meal to good use, cutting out the need to white flour and ensuring dense and gooey textures every time.

Depending on the recipe, you’ll need to adjust your cake pan. Some recipes call for a large loaf pan, while others require a springform tin. Springform tins are useful because they tend to prevent the cake from sticking to the sides of the pan, especially cakes using espresso powder of those with a chocolate flavour.
