Meatloaves with barbecue glaze
- 16 slice (240g) prosciutto
- 500 gram beef mince
- 350 gram veal mince
- 1 small_piece brown onion (80g), chopped finely
- 4 slice (170g) bottled roasted capsicum, chopped finely
- 2 clove garlic, crushed
- 1 egg
- 2 tablespoon barbecue sauce
- 1/3 cup (25g) stale breadcrumbs
- 1 tablespoon fresh oregano, finely chopped
Barbecue glaze
- 1/4 cup (60ml) barbecue sauce
- 2 tablespoon tomato sauce
- 1 tablespoon lemon juice
- 1 tablespoon brown sugar
Method
Meatloaves with barbecue glaze
- 1Preheat oven to 200ºC (180ºC fan-forced).
- 2Grease eight-hole (½-cup/125ml) petite loaf pan. Line each pan hole with two criss-crossed slices of prosciutto, extending above edges of holes.
- 3Make barbecue glaze by combining ingredients in small saucepan, stir over low heat until sugar dissolves.
- 4Combine minces, onion, capsicum, garlic, egg, sauce, breadcrumbs and oregano in large bowl. Press meatloaf mixture into pan holes, fold prosciutto over to enclose meat mixture.
- 5Bake 15 minutes, turn, top-side down, onto baking paper-lined oven tray. Brush meatloaves with glaze, bake, uncovered, 10 minutes or until browned lightly and cooked through. Serve top-side down.
