Grilled prawns with avocado cream and slaw

Ingredients

Grilled prawns with avocado cream and slaw
  • 12 uncooked small king prawns (420g)
  • 1 teaspoon piri piri seasoning
  • 2 teaspoon olive oil
  • 1/2 small ripe avocado (100g)
  • 1 tablespoon lime juice
  • 1 tablespoon cold water
  • 1 cup (80g) finely shredded cabbage
  • 1 small carrot (70g), cut into matchsticks
  • 1 green onion, sliced thinly
  • 1 teaspoon extra virgin olive oil
  • 2 tablespoon fresh coriander leaves, torn
  • lime wedges, to serve

Method

    Shell and devein prawns leaving tails intact. Combine prawns, seasoning and olive oil in a small bowl.

    Mash avocado, juice and water in a small bowl using a fork until mixture is coarsely mixed.

    Combine cabbage, carrot, onion and extra virgin olive oil in a medium bowl; season to taste.

    Cook prawns on a heated oiled grill pan or frying pan for 1 minute each side or until cooked through.

    Serve prawns with avocado cream and cabbage salad; top with coriander leaves and accompany with lime wedges.

Notes

For speed, use a mandoline or V-slicer to cut the carrot, or the coarse holes on a box grater. You can use an Asian vegetable peeler to peel the carrot into long thin strands. These are sold at Asian grocers and select kitchen shops.
