One thing the air fryer does exceptionally well, it has to be a good schnitzel. Crumbed meat fried to perfection and served with chips and aioli. Our air fryer lemon and herb pork schnitzel gives the classic schnit a bit of a flavour boost then served with tangy aioli and chunky chips. Just add salad and you’ve got yourself a complete and tasty meal.

An air fryer is a kitchen appliance that cooks by circulating hot air around the food using the convection mechanism. This circulates the air to temperatures up to 200 degrees, and the cooking chamber keeps the food close to the heating elements, allowing your food to be cooked in 10 to 20 minutes. The air fryer is extremely easy to use, and requires little to no maintenance. In addition to making the process of frying easier, it also results in healthier and tastier results.

Place flour in a shallow bowl. Lightly beat eggs, milk and garlic in a second shallow bowl. Combine breadcrumbs, parmesan, chives, thyme and lemon rind in a third shallow bowl. Dust pork in flour, shaking off excess, dip in egg mixture, then coat in breadcrumb mixture. Place schnitzels on a plate. Refrigerate for 30 minutes.

Preheat a 7-litre air fryer to 180˚C/350˚F for 3 minutes.

Spray schnitzels generously on both sides with cooking spray. Taking care, place half the schnitzels in the air fryer basket; at 180˚C/350˚F, cook for 10 minutes, turning halfway through cooking time, until golden and cooked through. Transfer to a plate; cover loosely with foil to keep warm. Repeat cooking with remaining schnitzels.

Serve schnitzels sprinkled with extra thyme and salt flakes, with aioli, chips and lemon wedges.
