Air fryer chips and wedges six ways

Wedges or fries, whichever you prefer - this handy kitchen appliance can create crispy homemade potatoes with minimal oil.

SPICY CAJUN POTATO WEDGES

Preheat a 5.3-litre air fryer to 200°C for 3 minutes. Cut 1kg unpeeled kipfler potatoes into wedges. Combine 2 tablespoons olive oil, ½ teaspoon ground oregano, 2 teaspoons ground cumin, 1 teaspoon hot paprika, ½ teaspoon ground black pepper, 1 teaspoon ground coriander and ¼ teaspoon chilli powder in a large bowl. Add wedges; toss to coat. Keep temperature at 200°C; set timer for 15-20 minutes. Cook, turning once, until golden and cooked. Serve wedges sprinkled with oregano leaves and salt.

SWEET POTATO WEDGES WITH LIME CHILLI SALT

Preheat a 5.3-litre air fryer to 200°C for 3 minutes. Cut 1kg orange sweet potatoes into wedges. Toss with 2 tablespoons olive oil. Keep temperature at 200°C; set timer for 15-20 minutes. Cook, turning once, until golden and cooked. Combine 2 teaspoons finely grated lime rind, 2 tablespoons salt flakes and 1 teaspoon chilli flakes in a small heatproof bowl; place in air fryer for the last 3 minutes of cooking time to dry out the rind. Serve wedges scattered with lime chilli salt.

PAPRIKA POTATO WEDGES

Preheat a 5.3-litre air fryer to 200°C for 3 minutes. Cut 1kg floury potatoes (sebago) into wedges. Place in a large bowl with 2 tablespoons extra virgin olive oil, 40g melted butter and 2 teaspoons smoked paprika. Season with salt and toss to coat. Keep temperature at 200°C; set timer for 15-20 minutes. Cook, turning once, until golden and cooked. Scatter wedges with ½ cup (40g) finely grated parmesan. Serve with garlic mayonnaise.

SALTED FRIES

Cut 1kg peeled floury (sebago) potatoes lengthways into 1cm-thick slices; cut slices lengthways into 1cm-thick batons. Place in a large bowl of cold water. Stand for 30 minutes. Drain; pat dry with paper towel. Toss with 2 tablespoons olive oil. Preheat a 5.3-litre air fryer to 200°C for 3 minutes. Set timer for 15–20 minutes. Cook, turning once, until golden and cooked. Serve fries seasoned with salt.

LEMON PEPPER FRIES

Make a batch of salted fries, omitting the salt. Combine 1 tablespoon finely grated lemon rind, ½ teaspoon freshly ground black pepper and 1 teaspoon salt flakes in a small bowl. Sprinkle hot fries with lemon pepper. Serve with lemon wedges.

Swap it Use grated lime rind instead of lemon and crushed Sichuan peppercorns instead of black pepper.

Serving suggestion These fries go well with battered or grilled fish, chicken, prawns and fish sandwiches.

CHILLI GARLIC FRIES

Make a batch of salted fries .Heat 2 teaspoons olive oil in a small frying pan. Cook 2 sliced long red fresh chillies until soft. Add 2 sliced cloves garlic; cook, stirring, until fragrant. Serve hot fries sprinkled with chilli mixture.

Serving suggestion These fries go well with hamburgers, and grilled or pan-fried steak and lamb cutlets.
