1.Boil, steam or microwave potato until tender; drain.
2.Meanwhile, place ingredients for teardrop tomato salsa in medium bowl; toss gently to combine.
3.Coarsely mash potato in large bowl; stir in remaining ingredients until combined. Using hands, shape potato mixture into eight patties; cook on heated oiled flat plate, uncovered, until heated through.
4.Serve patties with salsa.
