1.Mash eggs and mayonnaise in small bowl.
2.Process salmon and cheese until just combined; stir in capers and dill.
3.Spread salmon mixture over six slices white bread; top with brown bread. Spread egg mixture on brown bread; top with cress and remaining white bread.
4.Remove and discard crusts; cut each sandwich into three strips.
