Roasted carrot with zucchini and feta

ROASTED CARROT WITH ZUCCHINI AND FETA

Method

1.Preheat oven to 200°C (180°C fan-forced). Peel carrots, trim ends and cut into 5cm lengths. Cut zucchini in half, then cut each piece into quarters lengthways. Place carrots in a greased baking dish, season with salt and pepper and bake for 10 minutes. Remove baking dish from oven, add zucchini pieces and toss gently to combine. Return to oven for a further 20 minutes or until vegetables are just tender.
2.Meanwhile, sauté onion in a heated, greased frypan until just tender. Add brown sugar and balsamic vinegar and simmer gently until onions have a syrupy coating. Remove carrot and zucchini from oven and stir in caramelised onions. Serve topped with crumbled feta.

Recipe is best prepared as required. For a light meal (that serves four), serve with some crusty bread.
