Method

1.Roast capsicum under a broiler, skin-side up, for about 10-15 minutes, or until skin blisters and blackens. Cover capsicum in plastic wrap or baking paper for about 5 minutes; cool; peel away skin.
2.Meanwhile, heat an oiled skillet; cook onion and garlic for about 3 minutes or until onion softens. Add asparagus and olives; cook, stirring, for about 2-3 minutes or until asparagus is tender. Transfer mixture to a large bowl; stir in cheese and pepitas.
3.Divide asparagus mixture among capsicum halves, roll up around filling. Place rolls, seam-side down, on serving plates; drizzle with dressing.
