These scones are delightfully light and fluffy – you’d never guess they were gluten free! Whip them up for an afternoon treat or a high tea.

The scones are best made close to serving and enjoyed warm, slathered with jam and cream, or your favourite butter or other spread.

Method

1.

Preheat the oven to 220°C (200°C fan-forced). Line an oven tray with baking paper.

In a medium bowl, combine gluten-free and almond flours, baking powder, xanthan gum, icing sugar and salt.

3.

Rub the butter into the flour mixture.

4.

In a small jug, whisk buttermilk and egg together with a fork. Make a well in the centre of the flour mixture. Add buttermilk mixture, stir to combine.

5.

Turn dough onto a floured surface and form the dough into a 4cm thick disc. Cut dough into 5cm rounds, dipping the cutter into a little extra flour to prevent dough sticking. Place scones on prepared tray, 4cm apart.

6.

Brush top of scones with extra beaten egg. Bake for 15-18 minutes or until golden brown. Serve scones with jam and cream.

What is xanthan gum?

Xanthan gum is a thickening agent produced by fermentation of, usually, corn sugar. It’s used as a thickener, emulsifier and stabiliser to compensate for what gluten would ordinarily do – provide structure and hold ingredients together.

What is in gluten-free flour?

Gluten-free plain (all-purpose) contains a blend of gluten-free flours and starches (may include corn, potato, tapioca, chickpea and rice). Gluten-free self-raising is made similarly to gluten-free plain flour, but with the addition of gluten-free bicarbonate of soda (baking soda).

Both gluten-free self-raising flour and xanthan gum are available from supermarkets and health food stores.
