We’ve come a long way with gluten-free store-bought baked goods but sometimes you want that home-baked goodness. Whether you’ve gone gluten-free yourself or you’re baking for a crowd and want to ensure everyone can enjoy them, grab yourself a good gluten-free flour and get baking on these simple basic biscuits. The beauty of this dough is that you can enjoy them as is or add your favourite flavour to the dough. Your gluten-free friends will love you for it. ⁠

Method

1.Preheat oven to 180°C/350°F. Line four oven trays with baking paper.
2.Beat butter, brown sugar and vanilla in a medium bowl with an electric mixer until just combined. Add eggs; beat until just combined. Stir in sifted flours, bicarb and xanthan gum, in two batches. Cover; refrigerate for 1 hour.
3.Using wet hands, roll dough into 24 balls. Flatten balls with a fork to 6cm (2½in); place 5cm (2in) apart on trays. Scatter with raw sugar.
4.Bake cookies 18 minutes or until golden. Cool on trays.

Cookies can be stored in an airtight container for up to 1 week.
