Dainty finger sandwiches with tasty fillings are great for parties or a high tea. The best thing? They can be made a few hours ahead, as long as you keep them covered and chilled. Try these two simple, yet delectable sandwich fillings for your next high tea or as part of a Mother’s Day celebration.

Chicken, celery and mayonnaise

In a large bowl, combine all ingredients except the bread. Season to taste with salt flakes and freshly ground black pepper. Place half of the bread slices on a board. Spoon chicken mixture onto bread, spreading evenly to the corners. Top with remaining bread slices.

Store sandwiches uncut on a tray, covered with just damp paper towel and plastic wrap. Refrigerate until ready to serve.

Just before serving, cut sandwiches into fingers.

Prawn cocktail sandwiches

Combine prawn meat with mayonnaise, tomato sauce, lemon rind, lemon juice, and capers. Season with salt and freshly ground black pepper.

Spread 6 slices of bread with prawn mixture, right to the corners of the bread, then add the cucumber. Top with remaining bread slices. Store sandwiches uncut on a tray, covered with just damp paper towel and plastic wrap. Refrigerate until ready to serve.

3.

Just before serving, cut sandwiches into fingers.
