Method

1.Bring the water to the boil in medium saucepan. Remove from heat, stir in couscous and onion. Cover, stand about 5 minutes or until liquid is absorbed, fluffing with fork occasionally.
2.Meanwhile, heat oil in large frying pan, cook carrot, covered, about 3 minutes or until just tender. Uncover, cook a further 3 minutes.
3.Make sumac dressing. Combine ingredients, olive oil, lemon juice and sumac in screw-top jar, shake well.
4.Combine couscous mixture with carrot, dressing and remaining ingredients in large bowl.
