Method

1.Combine chicken, nuts, aïoli, sour cream and herbs in a medium bowl. Season to taste.
2.Cut 8cm (3¼-inch) rounds from bread, spread with butter. Place a level tablespoon of chicken mixture in the centre of one round. Sandwich with another round. Press edges together to seal. Repeat with remaining rounds and chicken mixture.
3.Cut pillows in half to serve.
