1.Blend or process beetroot and onion, in batches, until chopped finely. Combine beetroot mixture, sugar, salt, allspice and 1 1/2 cups (375ml) of the vinegar in large saucepan; bring to a boil.
2.Boil, uncovered, stirring occasionally, 30 minutes. Stir in blended flour and remaining vinegar; stir over heat until mixture boils and thickens. Spoon hot relish into hot sterilised jars; seal while hot.
