Method

1.Halve avocados, remove stones and peel.
2.Run a vegetable peeler lengthways along cucumber to slice it into thin ribbons. Place lettuce leaves and avocado halves on four entrée plates.
3.Twist or roll smoked salmon slices. Arrange smoked salmon and cucumber ribbons over lettuce.
4.Whisk olive oil and lemon juice together and drizzle over each serving. Season with freshly ground black pepper
