Cook rice noodles in a medium saucepan of boiling water for 2 minutes or until tender; drain.

Meanwhile, heat oil in a large frying pan or wok over high heat; stir-fry pork until browned. Add lemon grass and garlic, stir-fry for 1 minute or until fragrant. Add combined water and sugar, stir-fry for 1 minute. Remove from heat, stir in lime juice, fish sauce and green onion.

Serve pork mixture on rice noodles and serve with fresh coriander, crispy chilli oil and lime wedges.
Mince mixture suitable to freeze.
Use chicken or beef mince in place of the pork if you like. For a lower carb dinner serve the mince mixture wrapped in lettuce leaves.
Serving suggestion: Steamed Asian greens.
