Air fryer fried cauliflower with sumac

1.Place flour in a shallow bowl. Lightly beat eggs in a second shallow bowl. Combine the breadcrumbs, cumin, garlic salt and half the coriander in a third shallow bowl. Dust cauliflower florets in flour, shaking off excess, dip in egg, then coat in breadcrumb mixture. Spray generously all over with cooking spray.
2.Preheat a 7-litre air fryer to 180°C/350°F for 3 minutes.
3.Taking care, line the air fryer basket with a silicone mat, if available. Place cauliflower in the basket; at 180°C/350°F, cook for 12 minutes, turning halfway through cooking time, until golden and tender.
4.Meanwhile, to make sumac and garlic yoghurt, combine yoghurt, sumac, garlic and the remaining coriander in a small bowl, then season.
5.Sprinkle cauliflower with salt flakes and serve with sumac and garlic yoghurt.
