1.For the muesli mixture, combine oats, millet and khorasan wheat in a small bowl.
2.Place ⅓ cup muesli in each bowl; top equally with milk, yogurt, apricot and coconut.
3.Store remaining muesli in an airtight container and use for breakfast on another day.

This recipe makes enough for 6 servings of muesli (⅓ cup per serving); you can always make a larger batch and keep it in an airtight container in the fridge. If you can’t get the small tub of diced apricots, use the same amount of drained canned apricots in natural juice and chop them yourself. Puffed khorasan wheat is a steamed and puffed wheat grain with a rich nutty flavour. It is available from health-food stores or the health-food section of large supermarkets. It is often sold under the brand name of Kamut.
