1.In a large frying pan, heat oil over medium heat; cook veal for about 1-3 minutes each side, or until browned and cooked to your liking. Remove from pan.
2.Add onion to same pan; cook, stirring, for about 1 minute, or until onion is soft.
3.Add mushrooms, marsala and stock to pan; stir for about 2-3 minutes, or until mixture boils and thickens slightly.
4.Add veal to serving plates; drizzle with sauce and sprinkle with chives.
