Spicy fish in banana leaves

1.Trim one banana leaf into four 25cm squares. Using tongs, dip one square at a time into large saucepan of boiling water; remove immediately. Rinse under cold water; pat dry with absorbent paper. Trim remaining banana leaf to fit grill plate.
2.Cook paste and the water, stirring, in small frying pan until fragrant. Remove from heat; stir in juice. Score fish both sides through thickest part of flesh, place in large shallow dish; brush both sides of fish with curry mixture.
3.Peel ginger; cut into small matchstick-size pieces; combine in small bowl with onion, chilli and coriander.
4.Place banana leaf squares on bench; divide potato slices among squares, overlapping slightly in centre of each leaf. Place one fish on potato on each leaf; top fish with equal amounts of the ginger mixture. Fold opposite corners of leaf over to cover fish; secure each parcel with kitchen string.
5.Place trimmed banana leaf on heated grill plate (or grill or barbecue); place fish parcels on leaf. Cook, covered, about 20 minutes or until fish is cooked as desired and potato is tender.
