Method

1.Cook sausages in a heated oiled barbecue flat plate, turning, for about 10 minutes or until cooked through.
2.Meanwhile, heat oil in a medium frying pan over high heat; cook onion, garlic and dried herbs, stirring, until onion softens. Add vinegar, tomatoes, wine, paste and sugar; bring to the boil.
3.Reduce heat; simmer, uncovered, 5 minutes or until sauce is reduced by half and thick. Remove from heat; season to taste.
4.Microwave mashed potato according to directions on tub (or make your own).
5.Serve sausages with potato; accompany with thick tomato relish. Sprinkle with micro basil before serving.
