prawns with crispy thai basil



1.Shell and devein prawns leaving tails intact.
2.Heat oil in wok; shallow-fry basil leaves, in batches, until crisp. Drain on absorbent paper. Remove oil from wok (cool and save for another use).
3.Add tomato, chilli, sauce, the water and sugar to same heated wok; stir-fry about 8 minutes or until mixture is thickened slightly.
4.Add prawns, broccolini and onion to wok; stir-fry until prawns change colour, season. Serve stir-fry topped with crisp basil leaves.

To save time purchase 500g shelled prawns for this recipe.
