Prawn omelets

Prawn Omelets




1.Put eggs in bowl. Season with salt and pepper. Beat with rotary beater, only until eggs are slightly frothy.
2.Heat small amount of oil in pan. Gently saute mushrooms one minute. Remove from pan, drain, add to beaten eggs. Add shallots, celery, prawns and bean sprouts. Mix well.
3.Heat enough oil to just cover base of medium-sized frypan. When oil is hot, pour omelet mixture into pan using cup to make four small omelets.
4.When mixture is firm on one side, separate omelets with spatula or egg-slice. Turn, cook other side.
5.Stack on warm plate while cooking remainder of omelets; keep warm.
6.To make sauce, blend water and cornflour until smooth, add crumbled stock cubes, sugar, soy sauce and salt. Stir until sauce boils and thickens.
7.To serve, stack two omelets one on top of the other. Spoon sauce over.
