Pasta with eggplant sauce

1.Heat oil in large saucepan. Stir onion, celery and garlic over heat until onion softens. Add brandy and continue stirring until brandy evaporates. Add eggplant and stir over heat until eggplant is tender.
2.Stir in sauce, paste and water; bring to the boil. Reduce heat and simmer uncovered for about 10 minutes or until sauce thickens slightly.
3.Meanwhile, cook pasta in large saucepan of boiling water, uncovered, until just tender. Drain.
4.Place pasta in a large bowl with half of the eggplant sauce. Toss gently to combine. Divide pasta among serving plates and top each with remaining sauce and cheese.
