Method

1.Heat oil in large saucepan. Stir shallot, garlic and chilli, over heat until fragrant.
2.Stir in wine and undrained tomatoes; bring to the boil. Add mussels; cook, covered, 3 minutes or until mussels open. Stir in parsley.
