Method

1.Combine lamb backstrap or leg steak with lemon rind, lemon juice and garlic clove in medium bowl. Finely chop mint leaves; combine with ingredients in bowl. Cover, refrigerate overnight.
2.Cook lamb on heated oiled barbecue (or grill or grill pan) about 20 minutes. Cover lamb; stand 5 minutes before slicing thinly. Serve with a green salad.
