1.Heat oil and butter together in a large frying pan on high. When bubbling, add garlic and chilli and sauté, 1-2 minutes.
2.Add curry powder and cook for 30 seconds, stirring. Add prawns and onions, stirring for 2-3 minutes until prawns begin to colour.
3.Pour in cream and bring to boil. Reduce heat and simmer, 1-2 minutes, until sauce has thickened and prawns are cooked through. Season to taste.
4.Serve with rice, topped with shredded green onion.
