Method

1.Combine oil, lemon juice, salt, pepper, onion, zucchini and kumara in a large bowl; toss to combine.
2.Cook vegetables on a heated, oiled grill plate (or barbecue) until browned and tender; transfer to a large plate or dish, cover to keep warm.
3.Meanwhile, to make gremolata, combine all ingredients in a small bowl.
4.Cook steaks on a heated, oiled grill plate (or barbecue) until browned on both sides and cooked as desired.
5.Sprinkle grilled vegetables with gremolata; serve with steaks.

Not suitable to freeze. Not suitable to microwave.
