1.Bring a large pot of salted water to the boil. Cook pasta according to packet instructions. Drain well, reserving a little of the cooking liquid.
2.Meanwhile, heat oil in a large frying pan over medium heat. Add garlic, cook until fragrant. Add calamari and zest, cook, 1 minute. Stir in juice, butter and peas and cook until calamari has just turned white.
3.Toss through hot pasta, mint and a little cooking liquid if the pasta is too dry.
4.Season to taste with salt and pepper and drizzle over extra virgin olive oil. Serve immediately.
