Barbecued salmon

Fresh salmon is delightful and best served simply, such as in this lovely dish with steamed beans, peas and minted buttermilk dressing.

1.Finely grate 2 teaspoons rind from limes; squeeze juice from limes (you need 1 tablespoon juice).
2.Rub salmon all over with rind; cook on heated oiled grill plate (or grill or barbecue).
3.Meanwhile, boil, steam or microwave beans and peas, separately, until tender; drain. Combine beans, peas and half the mint in medium bowl; season to taste.
4.Combine buttermilk, remaining mint and juice in small jug; season to taste.
5.Serve bean mixture topped with fish; drizzle with buttermilk dressing.
