1.Sprinkle gelatine over the water in small heatproof jug; stand in small saucepan of simmering water, stirring, until gelatine dissolves.
2.Combine juice and gelatine mixture in large jug, pour mixture into 12 x ½-cup (125ml) serving cups. Cover, refrigerate 3 hours or until set.
3.Make tropical salsa. Combine ingredients in a small bowl.
4.Just before serving, spoon level tablespoons of salsa into each cup.

This recipe is also nut-free, egg-free and gluten-free.
