Caramelised pineapple

Add a tropical touch to these caramelised pineapple slices by stirring some desiccated coconut through the icecream, and drizzling passionfruit pulp over the fruit.

1.Peel rind finely from lime, avoiding the white pith. Cut lime rind into thin strips (or remove the rind with a zester). Squeeze two tablespoons of juice from the lime.
2.In a large oiled non-stick frying pan, cook pineapple slices in batches until they are browned on both sides.
3.Remove from pan. Add sugar, juice and rind to same pan and stir over low heat until sugar is dissolved. Return pineapple to pan and toss slices gently to coat in syrup.
4.Serve pineapple with ice-cream and syrup.

This recipe is best made close to serving.
