Method
1.Drain cherries; reserve syrup. Stir syrup and sugar in small saucepan over heat until sugar dissolves. Boil, uncovered, about 5 minutes or until syrup thickens slightly.
2.Sandwich ice-cream slices between lamington halves; place on serving plates. Top with cherries, then drizzle with syrup.
You can trim the ice-cream slice to fit the lamington, if you prefer.
