Tuna rice cake

1.Heat 2 teaspoons of olive oil in a deep 20cm frying pan, cook 1 finely chopped brown onion and 2 crushed garlic cloves until onion softens. Combine onion mixture with 2 cups cooked white medium-grain rice, tuna corn kernels, green onions and beaten eggs in a large bowl.
2.Heat same pan, add rice mixture, press down gently. Sprinkle with gouda cheese. Cook, covered, 10 minutes. Preheat grill, grill about 10 minutes or until browned lightly.
