Method

1.Grease deep 23cm square cake pan, line base with baking paper. Using two packets, prepare cake mix according to directions, pour into prepared pan. Bake in moderate oven about 1 hour. Stand cake in pan for 5 minutes; turn onto wire rack to cool. Using a serrated knife, level top of cake.
2.On a surface dusted with icing sugar, knead icing until smooth. Reserve 1 tablespoon icing for message tag. Knead colouring into remaining icing.
3.Place cake, base-side up, on board. Patch top, sides and base of cake with a little of the icing. Brush top and sides of cake evenly with some of the jam.
4.Divide pink icing in half tightly in plastic wrap. On a surface dusted with icing sugar, roll out other half of icing until large enough to cover top and sides of cake. Lift icing over cake then mould icing onto cake with hands dusted with icing sugar, trim edges of cake neatly. Brush top and sides of cake with more jam. Repeat process with remaining half of the pink icing.
5.Roll out reserved white icing until about 2mm thick, cut into a 3cm x 8cm rectangle for message tag, decorate as desired, leave to become firm. Using the non-toxic pen, write a birthday message on the tag.
6.Gently press a small heart-shaped cutter into icing all around cake. Position ribbons as for a present, tucking ends under cake. Decorate top of cake with flowers and tag.

Patch any gaps in the top, sides and base of cake with a little icing. Brush top and sides evenly with a little jam.
