Method

1.Heat oil in large frying pan; cook onion and sugar, stirring, about 15 minutes or until caramelised. Stir in seasoning, garlic and thyme. Cook, stirring, until fragrant; transfer to large bowl.
2.Meanwhile, boil, steam or microwave potato and pumpkin, separately, until tender; drain. Add potato, pumpkin and peas to bowl. Stir gently to combine; season to taste, cool.
3.Preheat oven to 200°C/400°F. Line oven trays with baking paper.
4.Cut 10 x 13cm rounds from pastry. Spoon ⅓ cup potato mixture onto each round; brush edges with egg. Bring pastry edges together to form a semi-circle. Pinch edges together to seal.
5.Place pasties on trays. Brush with egg; sprinkle with seeds. Bake about 30 minutes or until browned lightly.
