Fluffy frosting


1.Preheat oven to 180°C (160°C fan forced). Grease three holes of texas muffin pan, grease three holes of standard muffin pan.
2.Make cake according to directions on packet. Drop ⅓ cup of the mixture into greased texas pan holes, bake about 25 minutes. Drop 2½ level tablespoons of the mixture into the greased standard pan holes, bake about 20 minutes. Stand cakes in pans 5 minutes; turn, top-side up, onto wire rack to cool.
3.Meanwhile, to make fluffy frosting, stir sugar and the water in small saucepan over heat, without boiling, until sugar dissolves. Bring to the boil; boil, uncovered, about 5 minutes or until syrup is slightly thick or when syrup reaches 114°C/240°F on candy thermometer. The syrup should be thick but not coloured.
4.While the syrup is boiling and after about 4 minutes, beat the egg whites in small bowl with electric mixer until stiff peaks form; keep beating until the syrup reaches the correct temperature. When syrup is ready; remove the pan from heat, allow bubbles to subside. With motor operating, gradually add the syrup to egg whites, in thin, steady stream; continue beating until all the syrup is added and the frosting is thick and stands at stiff peaks.
5.Level cake tops; trim cakes into rounded shapes (see page 112). Turn larger cakes upside down. Place smaller cakes, top-side up, on top of larger cakes; secure with a little fluffy frosting. Spread cakes all over with frosting. Place marshmallows on top of small cakes for heads. Position cakes on prepared board.
6.On a surface dusted with sifted icing sugar, knead the ready-made icing until smooth. Tint with orange colouring. Mould into three carrot shapes for noses.
7.Make snowgirl using picture as a guide. Cut a bow from the red licorice strap and eyes from the black licorice strap. Secure bow, eyes and nose to head with a little frosting. Use pink M&M’s for buttons. Position Mallow Bakes around bottom of snowgirl for skirt. Position twigs for arms, and the umbrella on the snowgirl.
8.Make snowmen using picture as a guide. Cut buttons, bow and scarf from black licorice strap; position on bodies. Cut eyes from black licorice strap. Secure eyes and noses with a little frosting. Position twigs for arms. Make hats by cutting two 1.5cm (¾-inch) rounds from the licorice strap; secure to the heads with a little frosting. Cut two 1cm (½-inch) pieces from the licorice rope; secure to the base of the hats with a little frosting.

6-hole (¾-cup/180ml) texas muffin pan 12-hole (⅓-cup/80ml) standard muffin pan 40cm (16-inch) square prepared cake board 2.5cm (1-inch) round cutter We used cotton wool to create a snowy effect. Use your imagination when you’re “dressing” the snow folk and use whatever “clothes” you like. You could use chenille sticks (pipe cleaners) for arms instead of the twigs.
