Roasted truss tomatoes with basil

Roasting tomatoes results in a much more intense flavour. The combination of both fresh and deep-fried basil finishes off this brightly coloured and healthy side dish perfectly.

1.Preheat oven to 180°C/350°F.
2.Place tomatoes on oven tray; pour combined garlic, oil and vinegar over tomatoes, season. Roast, uncovered, about 10 minutes or until tomatoes soften.
3.Meanwhile, heat vegetable oil in small saucepan; deep-fry basil, in batches, until crisp. Drain on absorbent paper.
4.Serve tomatoes sprinkled with basil.
