1.Preheat oven to 160°C (140°C fan-forced). Remove rind and excess fat from spare ribs; cut into three pieces.
2.Combine all remaining ingredients in a large baking paper-lined ovenproof dish. Add pork and mix well to coat evenly in the plum sauce mixture.
3.Bake for about 1 1/2-2 hours, turning the pork occasionally, or until very tender and golden brown.
