Pork rack and vegetables

1.Preheat oven to 220ºC.
2.Rub pork rind with half the oil then the salt. Stand pork in medium baking dish; roast, uncovered, about 35 minutes or until rind is blistered.
3.Place vegetables in baking dish with pork, drizzle with remaining oil. Reduce oven to 180ºC.
4.Roast pork and vegetables, uncovered, about 40 minutes or until pork is cooked through. Remove pork from dish; cover to keep warm.
5.Increase oven to 220ºC; roast vegetables a further 15 minutes.
6.Meanwhile, make sage apples. Peel and core apples; slice thickly. Place apple, the water and sage in medium saucepan; simmer, uncovered, about 10 minutes or until apple is soft. Remove from heat, stir in sugar.
7.Serve pork with vegetables and sage apples.
