1.Preheat oven to 220°C (200°C fan-forced).
2.Brush mushrooms with ¼ cup of the oil. Top with tomato, cut-side up. Bake for about 10 minutes, or until mushrooms are tender.
3.Brush bread with another 2 tablespoons of the oil and rub with garlic. Place in a single layer on an oven tray; bake for about 5 minutes, or until golden brown and crisp.
4.Pound (or blend in small food processor) basil and remaining oil in a mortar and pestle for about 2 minutes, or until combined.
5.Top croûtes with rocket, mushrooms and cheese; drizzle with basil mixture. Sprinkle with extra basil before serving.
